Quick and Easy Homemade Pizza

This recipe for a quick pizza dough is perfect for an easy weeknight dinner, or to make ahead for lunchboxes. If you have little ones you could make mini pizzas and let them help to roll out the dough and decorate the pizza with their favourite toppings.



You'll Need:

1¼ cup wholemeal flour

1¼ teaspoons baking powder

½ cup of plain yoghurt or kefir

½ tablespoon of olive oil

Pinch of salt

Tomato paste or homemade pizza sauce

Your choice of toppings (dinner leftovers work well!)



Method:

Sift together flour, baking powder and salt in a large bowl.

Make a hole in the centre, and add yoghurt/kefir and olive oil. Mix in until all ingredients are well combined and a dough forms.


Knead dough for around 5 minutes, until it is slightly sticky, but doesn't stick to your hands.

Rest dough for 10 minutes while you prepare your toppings.


Preheat oven to 180°C.

Roll dough into pizza shapes on a lined baking tray, then top with tomato paste or pizza sauce. Add your favourite toppings and cheese, then bake for about 10-15 minutes, until cheese is melted and base is cooked.
