Hidden Veg Snack Bars

These bars evolved from my berry breakfast bar recipe to become a lunchbox staple, as well as a handy way of getting some extra veg in when the little guy is being a bit veggie-shy. If your little one is still learning to like veg, start with berries + some veg then gradually reduce the berries.


2 snack bars in metal box

You'll Need:

2 medium bananas, mashed

3 cups whole rolled oats

½ cup shredded coconut

1 loosely packed cup grated veggies

(I usually use carrot, beetroot* and zucchini)

⅔ cup milk or milk alternative

2 tablespoons olive oil

1 teaspoon cinnamon

1 teaspoon baking powder


Method:

Preheat oven to 180°C and grease a square baking dish or tin with a little olive oil or line with baking paper.


Mix all ingredients together in a bowl, folding in the veggies last.


Pour mixture into the baking dish and bake for 20-25 minutes until golden brown.

Allow to cool before slicing.


* Avoid giving large amounts of beetroot to babies under 12 months


Makes 6 serves (2 small bars per serve)
