This healthier version of french toast is really easy to make and perfect for a special occasion breakfast or brunch! French toast is also a great way to use up slightly stale bread.
2 slices wholemeal or rye sourdough bread
¼ cup milk or milk alternative
1 banana or a small handful fresh berries
½ teaspoon cinnamon
1 teaspoon olive oil
1 teaspoon maple syrup (optional)
In a shallow bowl whisk together egg, milk and cinnamon.
Dip the bread into the mixture and leave it to soak in, but don't let the bread get too soggy.
Heat oil in a pan over medium heat.
Once pan is hot, shake any excess egg mixture from bread, then add them to the pan.
Fry bread until lightly brown, then flip and fry until golden brown on both sides.
To serve, arrange bread on a plate and top with berries or sliced banana, and a little maple syrup.
Makes 1 Serve
