Banana Bread


If you often end up with spotty, uneaten bananas by the end of the week, instead of throwing them out, give this recipe a try! A slice of homemade banana bread is great as a morning or afternoon treat, or toast a slice and serve with some fruit and yoghurt for a café-style brunch at home!

You'll Need:

2 medium ripe bananas

1¾ cups wholemeal or oat flour*

2 teaspoons baking powder

1 teaspoon cinnamon

a pinch of salt

3 medium eggs

¼ cup olive oil

¼ cup milk of your choice

¼ cup honey or maple syrup

¼ teaspoon vanilla extract


Method:

Preheat the oven to 160°C (fan-forced).

Mash bananas in a large bowl, then whisk in eggs. Add all other wet ingredients and mix well. Add in all dry ingredients and stir until combined.

Pour mixture into a lined bread pan, and decorate with walnuts or banana slices if you wish. Bake for around 40 minutes, checking with a skewer to make sure the middle is cooked. Once cooked through, remove from oven and leave to cool.


You can serve the bread slightly warm, or store in the freezer (remember to slice it up first!), and then toast slices as you need them.

* You can make your own oat flour by blending oats in a food processor or good blender until they become a fine powder.

Makes 1 large loaf
