You'll Need:

1 cup water

¼ cup flaxseeds

¼ cup sesame seeds

½ cup sunflower seeds

½ cup pumpkin seeds

½ cup chia seeds

Sea salt

Olive oil

Method:

Preheat oven to 180°C and line a baking tray with baking paper, drizzled with a little oil.

Measure all dry ingredients (except salt) into a large bowl and mix to combine. Add water and stir until combined. Set aside for about 10 minutes, until mixture swells.

Use a spatula to spread mixture into a thin layer on the baking tray (about half a cm thick). Season with a couple of pinches or grinds of sea salt.

Bake for 30 minutes, remove from oven and use a pizza slicer or knife to score into desired shapes. Return to oven and bake for about a further 20 minutes, until crackers are crisp and lightly browned.

Leave to cool before eating. Store in an airtight container.

Makes about 10 large rectangular crackers
