Berry Porridge

A great breakfast for those colder mornings, this cosy porridge includes berries which contain antioxidants and nutrients that are essential for immune function, as well as nuts and seeds for a serve of healthy fats. Oats are also a source of beta-glucan, a complex carbohydrate which can help to lower LDL cholesterol and may reduce risk of cardiovascular disease.

You'll Need:

⅓ cup whole oats

½ cup milk or milk alternative

½ cup water

¼ cup berries (fresh or frozen)

1 teaspoon ground flaxseed

1 teaspoon sunflower or pumpkin seeds

1 tablespoon walnuts

½ teaspoon cinnamon

½ teaspoon pure maple syrup or honey (optional)

A few extra berries to decorate (optional)


Method:

Heat oats, water and milk in a pan over medium heat for around 5-10 minutes, stirring often, until liquid is absorbed and oats are soft.

Add berries and cinnamon to pan and stir for a minute or two, until combined and berries are warmed.


Transfer to serving bowl and sprinkle over flaxseed, decorate with nuts, seeds and berries, then drizzle over maple syrup or honey before serving.
